Windmill “hot pepper sauce”

Imported from Barbados this one, heat coming from “ripe peppers” (identification attempt pending) and mustard.

Its a fun yellow colour with flecks of chilli pepper; fairly runny it needs a good shake before deployment.

I love the smell of this one – just like picallili, which is congruent with the colour!

Its a little bit of a spicy number, tongue and lips burn helped on by the mustard which does a good job of clearing the sinuses. Quick flash burn and dies back to a tingly tongue and pleasant lingering warmth quite quickly; a little glow around the cheekbones.

By itself its a bit tangy of onion and vinegar and the texture is somewhat bitty but it comes into its own as an accompaniment – especially with the kind of things picallili works with: makes a wicked cheese sanger.
